Until about a year ago, oatmeal was at the bottom of my list of breakfast foods. I never liked the flavor (or lack thereof)...or the consistency…or the fact that it wasn’t Honey Nut Cheerios (an all-time favorite ever since I was a kid; probably because it was the only “sweet” cereal my Mom ever let my brothers and me eat).
About a year ago, I was trying to change up some of my eating routines, and decided to try one of Quaker’s many flavored oatmeals. Surprisingly, I liked it…and what’s better, it seemed that it really did keep me fuller longer. I recommended it to my Mom, who was also changing her eating habits, and she soon found a healthier replacement: McCann's Sugar Free Instant Oatmeal. Both of us love this stuff, especially the Maple & Brown Sugar flavor. I think my Mom has eaten it for breakfast every day for the last year…no kidding.
We’ve tried it with various stir-ins and toppings, and I think we’ve come up with a super-tasty, fiber-packed breakfast that you’ll want to eat every day too. And with fewer than 200 calories, it’s great for anyone counting calories to lose weight.
1 package of McCann's Sugar Free Instant Oatmeal (most grocery stores carry this; Walmart also carries its own cheaper version of instant sugar free oatmeal, with the same nutritional content...just make sure you get the sugar free stuff)
1/4 cup of Fiber One cereal
1/2 cup of water
1/2 cup of frozen berries
(strawberries, blackberries, blueberries, and/or raspberries…I use a frozen combo
of all four)
2 tbsp. fat free Reddi-Wip
Combine oatmeal, Fiber One, and water in microwave-safe bowl. Microwave for 1-2 minutes, depending on the strength of your microwave (be sure to check it after the first minute; if your microwave is extra-powerful, you’ll have an exploding mess on your hands).
Let oatmeal sit for a couple minutes, until all the water is absorbed. Add berries and whipped cream; stir and enjoy!
*You can use fresh berries instead, but the hot/cold contrast (hot oatmeal and frozen berries) is my favorite part of this breakfast.
