Raspberry BBQ Chicken with Salad of Mixed Greens and Raspberry Vinaigrette

Seems like I'm always looking for a new way to prepare boneless, skinless chicken breasts.  They're such a great source of lean protein, but I get so tired of the usual grilled version.  This recipe is quick and easy, and when combined with a salad of mixed greens drizzled with homemade raspberry vinaigrette (recipe below) and feta cheese, your tired old grilled chicken will sing like Sanjaya on American Idol.  Welcome to Hollywood, Dawg.

Raspberry BBQ Chicken (serves 2)
2 boneless, skinless chicken breasts (4-6 ounces each)
1/3 cup of apple butter BBQ sauce (any other type of BBQ sauce will work fine)
1/3 cup of sugar free raspberry preserves (try Smucker's version)
2 tsp. of chipotle paste or Tabasco chipotle sauce

Combine BBQ sauce, jam, and chipotle paste; spread on chicken breasts, covering both sides.  Grill and serve.  (I use a Foreman grill, which takes about 7 minutes, depending on the size of the chicken breasts.)

Raspberry Vinaigrette (serves 2)
1 tbsp. of sugar free raspberry jam
3 tbsp. of balsamic vinegar

Mix, and drizzle over two servings of mixed greens.  Sprinkle each salad with two tablespoons of reduced fat feta cheese (try the Athenos brand), and serve. 

As a quick sidenote...generally, what happens on girls' weekend stays on girls' weekend.  But my Mom's recent getaway with her good friends Elsbeth, Genevieve, and Jan provided the inspiration for this vinaigrette recipe...and they graciously agreed to let me share it with my readers.
